Tasting Notes
Aromas of black cherry, black pepper, wild sage and aniseed on the nose of this wine. The palate is dark and intense. Lots of freshly crushed black pepper that is fleshed out by pure back cherry fruit. This wine has a lovely density & complexity to it. Structured on the palate with a long finish.
In The Vineyard
The Syrah grapes are selected from a southerly facing vineyard on the property. Here the soils are slightly shallower and the vineyard yields grapes with thicker skins and intense concentration.
About The Harvest
The grapes were handpicked and cooled overnight in a cold room.
In The Cellar
The wine was naturally fermented in open-top concrete fermenters with a 30% portion of foot-crushed whole bunch. Maturation took place in 2nd & 3rd fill French barriques for 18 months.
